Decadent Chocolate Cravings

I am one of those people who are more inclined towards savory than sweet, yet there is always this odd craving for a melt in the mouth, warm chocolaty satisfaction. I have always enjoyed cooking for friends, listened intently to what they crave and desire and tried to find dishes to match their taste buds.

Chocolate has that comforting, mood fixing, heart warming effect when you eat it and along with coffee it might just be the kick you need to start your day or the jolt you need to stay alert on a day with long working hours. Things you love the most and ways to combine them in a treat to indulge in and this is what I came up with:

– 1 Cup Flour (Sifted)
– 1/3 Cup Sugar
– 1/4 Cup Unsweetened Cocoa Powder (Sifted)
– 1 1/2 Tsp Baking Powder
– 1/2 Tsp Salt
– 1 Large Egg
– 1/2 Cup Milk
– 2 Tsp Canola Oil
– 2 Tsp Vanilla Extract
– 3/4 Cup Semisweet Chocolate Chips (optional)
– 1 1/3 Cup Hot Brewed Coffee
– 2/3 Cup Packed Light Brown Sugar, Or Sweetener Granular
– 1/4 Cup Chopped Walnuts, Or Pecans (Toasted)

Preheat oven to 350°F. Coat a 1 1/2- to 2-quart baking dish with cooking spray. Whisk the flour, sugar (or Sweetener Sugar Blend), cocoa, baking powder and salt in a large bowl. Whisk egg, milk, oil and vanilla in a glass measuring cup. Add to the flour mixture; stir with a rubber spatula until just combined. Fold in chocolate chips, if using. Scrape the batter into the prepared baking dish. Mix hot coffee and brown sugar (or Sweetener Granular) in the measuring cup and pour over the batter. Sprinkle with nuts. (It may look strange at this point, but don’t worry. During baking, cake forms on top with sauce underneath). Bake the pudding cake until the top springs back when touched lightly, 30 to 35 minutes. Let cool for at least 10 minutes so it would not burn the taste buds in your mouth.

Serving this would be optimum with a side of vanilla ice cream sprinkled with nuts and a couple of strawberries to just make it perfect. With a dessert like this one you cannot expect less from your friends than “What’s the recipe?” and “This is unreal”
