Chicken Cilantrofied

Chicken tends to be one of least interesting meats to cook, yet I always took it upon myself to break the norm and make things differently. I experimented with all possibilities in cooking it being soups, salad, stews and roasts of all sorts but a signature recipe started unraveling itself recently and I thought it would be perfect to actually share it here.

Cilantro or otherwise known as coriander has a very distinctive taste that adds a certain tone to dishes that you cannot miss at all. I tend to use the dry leaves of cilantro in my dishes as the strength of their taste is not overwhelming. So for this recipe you will need:

– 1 Whole Chicken (You can use chicken breasts too if you prefer that)

– 2 Lemons Juice (You can replace this with white wine if you want)

– 2 Cloves Of Garlic (Chopped fine)

– 1 Tbsp Of Cilantro Dry Leaves

– 1/2 Tbsp Salt

– Dash Of Olive Oil

– A Sprinkle Of Chili Powder (Optional)

Get a large zip-lock bag put your chicken in there adding to it the garlic, lemon juice, cilantro and olive oil. Lock your bag and leave the chicken to marinate for at least an hour in the fridge before you cook it. Take your chicken out carefully and place it in a roasting pan adding the rest of the marinade around it. Dab the salt all over it (inside the chicken is also important for the taste to be all over) and sprinkle some chili if you want  it  too, Put the chicken breast down to collect the juices in there for more juiciness. Cover your pan with foil and put it in the oven on maximum heat for 30 min then flip it back to have breast up (keep checking on it to see if it has cooked fully). As soon as you see it done, you can open the foil up and grill it to get a golden chicken to perfection.

Now to make a sensational gravy to go with this dish all you need is to save the juices from the roasting pan, pour them into a small pot. Stir 1 spoon of flour in 1/2 a cup of cold water then add it  to the juices and let it simmer as you stir. You will see that your gravy is getting thicker (you can add some salt if needed). Serve your chicken with a slither of that gravy on top to give it a mouthwatering look that is irresistible.
